Chocolate Caramel Potato Chips

I’m not really known for making healthy food choices.
I mean, I pretty much live off of Pop Tarts.
And in case you didn’t know, people whose diet consists of stuff like Little Debbies and Hot Tamales get hungry very frequently.
Like, about every 3 hours.
This isn’t really a problem if I’m at home, kickin’ it housewife style. But if I’m out running errands or on vacation, it can get annoying, because I don’t exactly carry a plethora of snacks around in my bag. If I did, the kids would have scavenged them already. Kids can sense purse snacks the way dogs instinctively know when you’re thinking about cooking bacon.
So, what usually happens is that after a few hours without a sugar fix, I finally get cranky and ask my husband to stop somewhere for an ICEE or a candy bar. At this point, my husband decides to be all sensible and remembering-ey and responds with something like “we just had lunch an hour and a half ago, did you not get enough to eat?”
Now I’m not only in need of a snack, but I’m also getting defensive. So I respond, “well, it’s not really that I’m hungry, my body is just telling me I need sugar. It’s not MY fault… I think I have a gland problem. Plus, I’m like, borderline diabetic. I went on Web MD one time, and it pretty much looks like I have low blood sugar.”


And that’s the part of the conversation where he says,”well, you need to make an appointment and get that checked out by a doctor”.


Which, we all know, is him calling my bluff and disguising it with concern.


So I say, “okaaaay….fine…. but for now lets just stop at the store so I can get some Mike and Ike’s or something. Or I might get sick. Seriously, I’m feeling faint”.
Word to the wise: “feeling faint” will usually work. No one wants to be responsible for an unconscious person.


And no, I haven’t made the doctor appointment. I don’t need to pay $65 to be told that my only problem is that I have the appetite of a 5 year old child.
So here’s a treat that only a true junk food lover could love: potato chips brushed with melted caramel, dipped in chocolate, and sprinkled with Heath toffee pieces. Not only does this combination totally work, but you also get your vegetables in. I’m thinking lunch…??

INGREDIENTS
12 oz milk chocolate (I used candy melts)
12 oz bag rippled potato chips
14 oz bag of caramels, unwrapped
3 tablespoons half and half
Bag of Heath Bar Bits ‘O Brickle
Line baking sheets with wax or parchment paper and set aside. Put caramels and half and half in a microwave safe bowl and microwave for about 3 minutes, stirring every 30 seconds. Stir until melted and creamy.
Using a pastry brush, lightly brush the melted caramel halfway down both sides of the potato chips. Be sure to brush only a light coat, or the chips will get too soggy. Place on lined baking sheets to set for about 30 minutes.
Melt the chocolate in a microwave safe bowl and dip the caramel coated chips about a third of the way, allowing the excess to drip off. Sprinkle the Heath Bar bits on the melted chocolate and place back on the wax paper to set for about 2 hours.
